Strawberry Cheesecake Filling

Time for dessert!  How does chocolate cake with strawberry cheesecake filling sound?  Yeah, sounded good to me too. 

I bought an 8oz tub of strawberry cream cheese thinking it would be a huge hit with the girls. It was not. It was "weird." Rather than throwing away a practically full container of weird strawberry cream cheese, I decided to add a few ingredients and a boxed cake mix and turn it into a yummy dessert! Just for fun, I made cute. mini layer cakes but you can use this filling for any size cake.

The chocolate cake is your favorite flavor brand of cake mix. Make the batter according to the directions. If you want to make little cakes or petite fours like I did, it was super easy.  I lined an 8x8 pan with parchment paper, which I then buttered. I poured 1 cup of cake batter in and baked it about 10 minutes or until the toothpick came out clean. Then I repeated so I had two layers.  

The filling recipe is below:

Strawberry Cheesecake Filling

8 oz tub strawberry cream cheese at room temperature

4 TBS powdered sugar

1/8 tsp vanilla extract

1/2 c. heavy cream

1/4 c. sour cream (I used light and it was fine)


In a large bowl, beat the cream cheese with the sugar and vanilla  until combined. Add the cream and beat until light and fluffy. Blend in the sour cream.


To assemble the cakes, I lined the 8x8 pan (now clean) with plastic wrap, leaving about 6 inches on either side .


Layer in this order: cake-filling-cake. To have a nice flat top on your finished cake, turn the top layer upside down. Also,  using the entire recipe of filling gave me a layer of filling that was equal to the size of the cake layers which is what I wanted.




 Wrap the plastic wrap over the cake and chill 2 hours or until set. 

To remove the cake, run a butter knife around the edge of the cake and use the plastic wrap to lift it onto a cutting board (or cake plate if you aren't making mini cakes.)
 
If you are making mini cakes, you'll want to slice the edges off to make nice straight sides. Oh too bad, you have to eat all the scraps. 

Cut the frozen cake into whatever size you want your mini cakes to be. Mine were about 2" x 2".

You can glaze them but I simply melted a container of chocolate frosting in the microwave and drizzled it over the frozen cakes. It stays sticky so you have to eat it with a fork. But it the easiest way to frost anything.  They are so cute, aren't they?  I served them in cupcake liners for the girls. Awww, pretty.



I really enjoyed the strawberry cheesecake filling and I think I will try it in a graham cracker crust for a quick no-bake cheesecake.
