4 Berry Parfait Sauce (Healthy Dessert !)

Who is ready for a healthier dessert option?  Who wants all the sweet flavor but none of the guilt?  Who wants to eat a parfait made with luscious berries?  I DO! I recently decided to change the way we have been eating. My lifestyle before my marriage was healthy and full of fruit and vegetables, lean proteins, and the occasional sweet. My lifestyle after my marriage has slowly deteriorated. Jim and Molly each have a huge sweet tooth and I have found myself not only eating more sweets but more processed foods as well. I have decided it's over and I want to return to a healthier lifestyle and eat more wholesome foods.  But my own sweet tooth beckons!  So I cooked up a sweet berry sauce to put over light ice cream or low fat yogurt and have been enjoying yummy parfaits every day for a snack!




It is so easy to make!  I got the idea from a blueberry cheesecake topping my mom and I make. I just subbed a frozen bag of mixed berries for the blueberries!

Ingredients:
1 12 oz package frozen mixed berries. Mine included blackberries, raspberries, strawberries, blueberries.
1/4 cup Splenda Sugar Baking Blend (This product is half  Splenda and half sugar but you could use all Splenda or all sugar and you can adjust this to your taste)
The juice of half a lemon
1 tablespoon cornstarch

Directions:
Place all ingredients in a medium saucepan.


Stir to blend ingredients.  Cook over medium heat until it boils. Lower the heat and simmer for about 15 minutes.  Stir often!!



Action shot!

Pour it into a jar to cool on the counter. The mixture thickens as it cools. Once it's cool, cap and refrigerate.


To make my parfait I layered light vanilla yogurt on the bottom, the 4 berry parfait sauce, and then a dollop of fat free Cool Whip. It was lush and decadent tasting but it wasn't laden with fat. Exactly what I was going for!  OK Ok, Cool Whip isn't exactly wholesome but really, who could give it up?  It's just about the best thing ever.
