Zucchini Bread Recipe

I was walking through the supermarket yesterday. They had some slim zucchini on the old vegetable sale rack for a few cents so I decided this would be a good weekend to bake some of the best zucchini bread known to man. My mom has made this zucchini bread recipe for years and she got it from a friend of hers so I don't know how the recipe originated. But I do know that whenever it gets made, it gets devoured by everyone, including my husband and kids who are not enthusiastic about vegetables in general, let alone baked into a bread.









Best Ever Zucchini Bread

Ingredients:
3 eggs
1 cup vegetable oil
2 cups sugar
3 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
3 cups all purpose flour
2 cups grated zucchini (peeled first)
3 tsp vanilla

Directions: 
1. Spray 2 loaf pans with cooking spray or grease with shortening. Set aside.
2, Preheat oven to 350 degrees F.
3. Peel and grate zucchini.
4.Blend all the ingredients together, pour into prepared loaf pans, and bake for 50-60 minutes or until a toothpick comes out clean.

Makes 2 loaves. You can also add nuts or chocolate chips if that suits your taste. The chocolate chips suited mine so my second batch got some chocolate love.

  4. I will give this a go and get back to you with .We have had a glut of zucchini this year so I've been making lots of stuff . So far the carrot,orange and zucchini cake has been my favourite .The link is below if anyone wants to make one.
