Valentine's Day Dessert: Strawberry Fool In Love

Hi friends!  Thanks for stopping by Days of Chalk and Chocolate!  I'm so excited to be part of this awesome Valentine's Day blog hop!  Today I'm sharing my quick and easy Valentine's Day dessert that I tongue-in-cheeky named Chocolate Strawberry Fool In Love.




 I adore strawberries and chocolate together and I thought combining them into a rich, creamy dessert would be the perfect way to celebrate Valentine's Day! Don't they look pretty?  They taste even better!



But before I say too much, I need to explain how this dessert came to be.  I had the grand idea of creating a double chocolate cookie with cherries in them. Yum. So I tried to devise my own cake mix cookie and it flopped. Like in a huge way. They became little cakes instead of cookies. They tasted yummy but they were definitely NOT a cookie. 

What to do?  I crumbled the little cakes into the bottom of a jar and then topped it with a generous scoop of strawberry fool. Fools are so easy and so delicious! The combination of the soft cake bottom and billowy, clouds of berry cream made this dessert an instant hit! You can even leave the cherries out of the cake since you can't really taste them. 




Strawberry Fool In Love
Cake Ingredients:
1 Devils food cake mix
1 cup chocolate chips
1 12 oz package frozen cherries (drained and chopped)
2 eggs
1 cup water

Strawberry Fool Ingredients:
2 cups heavy cream
1 and 1/2 cups frozen strawberries, thawed. Do not drain.
2 TBS sugar (or to taste)

To make the cake: Mix and all the ingredients up to the water in a medium bowl and bake in a greased 9x12 pan for the time/temp stated on the box. Let cool and then turn to crumbles.

To make the fool: In a chilled bowl, beat 2 cups of heavy cream with the sugar. If you bought sweetened strawberries you can forgo the sugar all together. Beat the cream to stiff peaks.  Set aside.


In a separate bowl, add the strawberries with some of the liquid and mash with a fork or a potato masher. You don't want a puree. You want some chunks of strawberries but it should be pretty mashed up.


Gently fold the strawberries into the whipped cream until they are combined but still streaky.

To assemble desserts: Add a layer of cake crumbles to each dessert dish. You can make this as thick as you like. Layer in the strawberry/cream mixture. You can garnish as you wish. I used a drizzle of chocolate syrup but you can do anything you like. You can layer it like a trifle I suppose, too. Freeze any leftover cake for another fool-ish day!  Ha ha!  Cracked myself up.




I urge you to keep fools in your back pocket for quick desserts. All you need is some kind of mashed up fruit and whipped cream!
