Let's talk cookies!  You know I love a good dessert (who doesn't?) and one that is super quick, super easy, and super yummy is just about perfect.   Strawberry Chocolate Chip Cake Mix Cookies are all of those things!  We all loved them and I loved that by using a cake mix we can have all different flavors of a soft, tender cookie without all the work.  These were absolutely luscious!

Beehive Cookies: Decorated Cookies For Spring

I am feeling blue lately.  This extended winter is bringing me down and I keep trying to find signs of spring to lighten my mood.  We have a few daffodils poking up through the ground but otherwise there is nothing lively outside.  Cue the spring cut out cookies!  I used a new beehive cookie cutter and spent a few nights having fun with some colorful icing. I figure if spring can't come to me I will make my own!

I bet you've been spending a lot of time in the kitchen getting ready for the holidays. I know I have!  And every  year without fail I bake my ultimate favorite Christmas cookie (next to Mallomars which I would never make at home. You can't make Mc Donalds at home and you can't make a Mallomar either but I digress) which are Double Chocolate Mint Cookies. I adore chocolate and I adore mint and I adore cookies. Winning all around!

Our Christmas Entertaining (So far!) and Cookie Exchange

We have been entertaining more than usual lately. The Christmas mood has hit us and we've been able to spend two weekends with friends, both near and far!  I thought I'd share some pictures of the decor and food from those events and maybe you will be inspired to do a little holiday entertaining yourself!

Today's pictures are from a cookie exchange I hosted with some of my mom friends from our town. We each prepared 2 dozen of the same cookie and then we left with 2 dozen different cookies!  I served the Cranberry Champagne Cocktail, eggnog, some Prosecco salami with provolone cheese, chocolates, cookies of course, and a yummy spinach dip.  Now mind you, these are not staged photos and you'll see imperfections!




Cookie Snow Scene Jars (How To Display Christmas Cookies)

Have you seen all the cute snowy jars everyone is doing around Blogland?  I adore the sweet scenes of little cottages nestled in sugar or salt in jars of all sizes, clustered together on a mantel or shelf. I have seen some that are perfect in their simplicity with just an ornament or a pine bough as the star attraction in the jar, too.  

After icing some cut out cookies the other night, I was looking around my kitchen and thought "How cute would it be to create a little scene in sugar snow in jars with cookies??"  I grabbed my sugar, scouted down some jars of different sizes and literally plopped some cookies in to create miniature forests or fields of snowmen!




Frozen Strawberries-n-Cream Bites

We served a variety of desserts at Ellie's birthday party a few weeks back. One of the more popular desserts was a strawberry fool. If you don't know what a fool is you don't know what you are missing!  Think sweetened mashed fruit stirred into sweetened whipped cream. That's it!  So easy and soooooo good.  It's the perfect summertime dessert.  But could I make it into a frozen dessert?  Hmmmmm. Yup!

Hey everyone!  We had a great time in Ocean City, MD despite Molly having a little stomach thing one night and a sprained knee the day before!  Now we are in the outer banks of North Carolina, my favorite place to be in the summer!  We had a blast last year and it occurred to me that it's my 1 year blogging anniversary!!  I love commemorating it with guest bloggers so here is another one!  Micki from Confessions of an ADD Housewife is giving us a taste (heh heh) of her early blogging days with this delicious sounding chocolate chocolate chip cookie recipe!  Check out all her cool ideas on her blog!  And remember, if you pin anything on this post please go back to her site and pin from the ORIGINAL posting! 





I've been working on perfecting a cookie recipe. I'm not one to reinvent the wheel, so I started with an excellent recipe from Alton Brown. I've been tweaking it for awhile with different types of milk, trying to get just the right richness and softness. I've tried using things to make it healthier, like flax but it wasn't quite the right texture.

Last night, I tried a new combination that hit it out of the park and tastes exactly like the chocolate chocolate chip cookies from Subway...the ones our local shop no longer serves.

So here it is... Please try it and let me know what you think! Next go around I'm going to try mint chocolate chips or maybe mint extract instead of vanilla.

Clone of a Subway Chocolate Chocolate Chip Cookie
  • 2 sticks unsalted butter or margarine
  • 2 1/4 cups flour
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1/3 C dark cocoa powder
  • 1/4 cup sugar
  • 1 1/4 cups brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 tablespoons half and half
  • 1 1/2 teaspoons vanilla extract
  • 2 cups semisweet chocolate chips

Directions

Heat oven to 375 degrees F.
Melt the butter. Sift together the flour, salt, and baking soda and add in cocoa powder. Set aside.
Pour the melted butter a large bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons half and half and vanilla extract and mix until well combined. Slowly add the flour mixture until thoroughly combined. Stir in the chocolate chips. Use a spoon or rubber spatula.
Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

Party Cookie Pops, Chandelier

Hi friends!  Ellie is turning two on Saturday and oh boy is she. Molly never really had terrible twos, I'm coming to realize. Oh I thought she did. I was way wrong. My little Eleanor has two moods. Adorable and beastly.  She switches between the two without warning or reason.    You know how they sometimes post the names of people who bounce checks hanging in the cashier's stall?  Well, I'm pretty sure my name is on some list at Michael's now. She threw such a fit the manager came with free craft items for the girls just to try to get her to quiet down.  The only thing she wanted to do was touch, touch, touch,grab, spit, etc.

Then at dinner tonight she threw her pasta at Molly, then she spit milk all over the table, and finally she kept jumping on Molly's head while they were resting and watching TV in my bedroom. The worst?  As Molly is yelling "OW" Ellie is cracking up. She can be a bit maniacal!

And then she does the sweetest things a minute later, like saying "MMMMM, Nummy!  This is goooood!" as she eats her dinner or that she carries books around wherever she goes so she can "read" to herself.

Have I told you she loves fish?  If not, Ellie loves fish. She points them out wherever she sees them and yells "WISH! WISH!"  So her birthday party theme is goldfish. I practiced making a few of the Oreo cookie pops today and I think they mostly came out cute!  


I had a bit of trouble getting the cookies to stay together once I pushed the stick in. I think the cream was too soft. Next time I'll chill them for a few minutes to stiffen it up. Maybe that would help.



Guess what!  Jim found my chandelier crystals!  He literally went through every unpacked box in our basement and the entire basement is full of unpacked boxes. Of course they were in the last box.  But now she's complete again and things are all back in balance in the universe.
