Banana Muffin Recipe

I had a couple of gnarly looking bananas in my fruit bowl so I decided to make my favorite muffin...banana chocolate chip streusel. Everything is yummy with streusel!




Banana Chocolate Chip Muffins with Streusel Topping:

Prepare the streusel topping. I use the * Martha Stewart recipe and I always keep it in the freezer to sprinkle on this and that.  It keeps well in a freezer bag. 

Muffin Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  •  1/2 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/2 tsp vanilla
  • 1/2 cup semi-sweet chocolate chips
  • Streusel topping
Directions
  1. Preheat oven to 375 degrees F. Lightly grease 12 muffin cups, or line with muffin liners. I spray the muffin liners too just so all the yumminess comes out.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir in the vanilla. Stir the banana mixture into the flour mixture just until moistened. Stir in the chocolate chips. Spoon batter into prepared muffin cups. I use a large ice cream scoop/muffin scoop.
  3. Top with streusel. I use about a tablespoon on each but you can adjust to your taste
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.               
  5. Skarf
